Peanut Butter Chocolate Blondies

These were originally called “peanut butter brownies.” I’m sorry, but these are not brownies. To be a brownie, you have to be chocolate through and through. It’s like qualifying a dark blonde as a brunette; us real brunettes just won’t have it.  Now these guys, over here, that I made and fell in love with a few months back, are peanut butter brownies. But these things that you see above (and below), with not a bit of chocolate in the batter, are peanut butter blondies. Honestly, it doesn’t really matter what you call them, because oh. my. god. are they good.

These are exactly as good as they look. Another dense, fudgy bar cookie with no leavening and a thick, chocolate ganache top. Nothing stands between you and these bites of goodness but 10 minutes and a mixer.

Often, my bit of sweet involves a spoonful a few spoonfuls of peanut butter  and a few a bag of chocolate chips. This takes that poor man’s comfort dessert to a whole ‘nother level of awesome. You should probably whip this up for your next friday night wine and movie night (hey, you know you’ll have one and if you won’t, we can’t be friends). They’ll make the week that preceded it completely melt away. Promise.

Peanut Butter Chocolate Blondies

From from Butterwood Desserts via Gourmet via Smitten Kitchen. Serves 1 (me.)

I can’t believe I’m about to say this, but next time I make these, I may cut back on the chocolate ganache. Not all the way. Don’t be crazy. I just felt like it was a tad too overwhelming for the peanut butter below. 

Blondies
2 sticks (1/2 lb) unsalted butter, softened
1 3/4 c sugar
1 c creamy peanut butter
2 lg eggs plus 1 lg yolk
2 t vanilla extract
2 c all-purpose flour
1 1/2 c semisweet chocolate chips (9 oz)
1/2 t salt

Ganache
1 1/2 c semisweet chocolate chips (9 oz)
1/2 c heavy cream
1 T unsalted butter, softened

  • Heat oven to 350°F. Grease a 9″x13″ baking pan, line with parchment paper, and grease again
  • In a large mixing bowl, with an electric mixer, cream the butter and sugar until fluffy
  • Add the peanut butter and incorporate well
  • Add the eggs, egg yolk, and vanilla and mix well
  • Add the flour and mix on low until just combined
  • With the mixer on low or with a spoon, stir in the chocolate chips
  • Spread in prepared pan and smooth the top (it will be very thick!)
  • Bake ~40 min until golden, puffed and a tested comes out with moist crumbs attached.
  • Cool completely in the pan

While the brownies cool, make the ganache:

  • Place the chocolate and butter in a heat-proof bowl
  • In a small saucepan over medium heat, bring the cream to a simmer
  • Pour the hot cream over the chocolate and butter. Let sit one minute, then whisk until smooth
  • Pour the ganache over the brownies and let set, ~15 minutes
