Griddled Peaches with Goat Cheese and Honey

Are you ready for the prettiest, simplest, most perfectly seasonal, satisfying summer dessert? Alright then, here you go:

Griddled Peaches with Goat Cheese and Honey

Serves 1.

I really wanted to called these “Grilled Peaches with Goat Cheese and Honey,” but, well, that would be a lie. A white lie sure, but there certainly is nothing resembling a grill in or near my NYC apartment. Well that’s not true either…I do have a grill pan, but my cast iron skillet was sitting on my stove and it was clean and so there we are.

 
1 T butter
1 peach, cut in half, pit removed (preferably free-stone)
1 oz goat cheese
honey

  • Melt the butter in a heavy pan over medium-high heat
  • When hot, place the peaches, cut side–down in the pan and cook until brown and caramelized (~3 min)
  • Remove peaches from pan and place cut side–up on plate
  • Divide goat cheese between peaches and drizzle with honey
