There are a few perfect flavor combinations in this world: peanut butter and chocolate, salmon and dill, brandy/grand marnier/lemon juice, and of course, bacon, lettuce and tomato. At the height of summer, those last three ingredients come together to make something so much more amazing than the sum of its parts.
Summer is almost gone guys! Yes, Labor Day signifies the unofficial end of summer, but we all know that it generally hangs around a few more weeks. I know, the breeze is cooler and the days are shorter and there are promises of apple cider in the air, but it’s just not time to give up on summer. Not just yet. The tomatoes are still here, and so is the corn. Recipe after the jump…
I totally got scooped on this recipe earlier in the week. I hate it when that happens and, oddly, it seems to happen more often than you would think. I suppose it’s not that surprising really. I mean, I read certain blogs not only because I love the writing, but because I love the FOOD; because I look at those blogs and almost every post makes me think “I wanna make that”; because I think we share the same food soul. So obviously, were reading the same magazines and obviously the same recipes talk to us. That’s ok with me. Those other blogs are so much more than mine will ever be and I’m happy to in some way resemble them. When I saw this recipe posted earlier this week, my initial response was “damn it!” and my second was “oh well.” I was making this no matter what and, zomg, thank god I did.
I’m just gonna come right out there and say it. This is one of my favorite salads of all time. I know, it’s a bold statement, but it’s been on my regular rotation for years now and every time I make it, I wonder why I waited so long since the last time. This salad has a little bit everything: earthy black beans, sweet summer corn, creamy avocado, acidic tomatoes, tangy feta, bright bell peppers, spicy, crisp radishes, and sweet, crunchy jicama, all bound together with a tangy and sweet, garlic and jalapeño-laced, lime-honey dressing. I mean honestly, what’s better than that.
Summer came on like a wildfire this year and it is taking no prisoners. It’s like the heavens knew that Memorial Day was here and it was time to flip the switch. We went from cold and rainy and positively depressing to humid and sweaty and positively oppressive overnight. Spring would have been nice. But hey beggars can’t be choosers and it’s not all bad: it’s BBQ season.
There’s nothing better than a dinner party. I really just love them. I love the preparation as much, if not more, than the actual event. Yes, it can be frantic, but it can also be calming and oh-so-satisfying in the end. I had the work girls over about a week ago. My go-to dishes for parties tend to be a large pot of something meaty and braised; I feel like there’s no better way to feed a large crew and, honestly, it’s hard to screw up a braise. Unfortunately, there was a large proportion of vegetarians (43%!?!) coming this particular night so the meat was out. After several conversations with my mom, I ended up with a variety of crepes, which are easy, fun and oh-so-girly.
