Spiced coconut lentil soup

Dear lord it’s COLD. I know, it’s January, it’sĀ supposedĀ to be cold. But listen, last year, we had virtually no winter; one freak October snowstorm and we were done. That was followed up by the mildest, most beautiful spring and then the most blisteringly hot summer in recent memory. In short, it’s been a year-plus straight of some pretty obvious global warming, and I am just not ready for wind that makes your cold-induced tears freeze to your face.

Celeriac, Lentil and Walnut Salad

I eat a lot (a lot), a lot, A LOT, a lot of lentils. Aside from chickpeas, which I can’t live without, lentils are my favorite little legumes. It’s considered good luck to eat them on New Year’s day; they’re shaped like tiny coins and are supposed to bring you prosperity in the coming year. I can only hope that they’re lucky year-round, cuz given the sheer mass of them that I put down, I should be rollin’ in it!

Squash, Lentil and Goat Cheese Salad

Guys, I am so, so, so tired. I think it might have something to do with the whole wedding/family-family-wedding marathon I’ve been doing the last few weeks. It may also have something to do with the raging cold I developed in the middle of it all, which I’m yet to shake. Regardless of the reason, I. Am. Tired. But I’m getting back on track. I fully intend to do NOTHING this weekend. My nothing will involve some (a ton of) quality time with my DVR, maybe some fall shopping, and a whole lotta fall cooking.

Yes, ok, I’ll admit that the above doesn’t look that appealing, but just stick with me for a minute okay? I was a biochemistry major in college, which led to an advanced science degree and a job that revolves around research and scientific rigor. But I was also a Classics (emphasis on ancient art and history) minor. In fact, I was only a classics minor due to a poor advisor that failed to point out that I was 2 credits short of my intended double major. Oops. Anyways, the point is, I did a lot of reading about Greece and Rome and the Ottoman Empire and, of course, Egypt. Those ancient civilizations were absolutely amazing and I’ve always been a little obsessed. They are all top of the list as far as places I want to visit. Unfortunately, with the exception of Italy, I haven’t made it very far yet.
